How we made this stuff - Hand harvested sustainable farmed Chardonnay was picked on Sept 6, 10 and 18th 2018 from the Gold Hill vineyard in Oliver BC. It under went spontaneous wild ferment in concrete tanks then was aged a further 6 months in my concrete tanks til we bottled and left it to rest for a further 18 months. Bottled unfined and unfiltered it then was riddled and disgorged in June 2020. No added sulphur / Zero Dosage - champagne method
