Winemaking: Sustainably farmed and hand harvested on September 14th 2018 our Sauvignon Blanc was whole cluster pressed with a light skin contact. The wine underwent Wild/Indigenous Alcoholic fermentation and Malolactic fermentation. Aged in concrete and on gross lees for 5 months the wine was bottled unfined and unfiltered.
