Winemaking: Organically and sustainably farmed hand harvested blend of Pinot Blanc(72%) and Pinot Noir(28%). Whole cluster pressed into a mix of concrete and stainless steel vessels where it underwent spontaneous alcoholic fermentation. The wine was aged on gross lees for 4 month prior to secondary fermentation taking place in our state-of-the-art Charmat tanks; designed to lie on their sides, replicating a bottle en tirage.

Tasting Notes: Not your Grandparents sparkling wine. Our undoubtedly delicious, sincere and unique version will surely raise eye brows wherever you are. Don’t blame us if you get Kicked out of the Country Club!
