How it tastes - still in awe...
How we made it - Sustainably farmed hand harvested Pinot Blanc on October 1st . Whole cluster pressed into our tulip shaped concrete vessels where it underwent spontaneous alcoholic fermentation for 14 days prior to being bottled. Aged on its lees for 6-8 months this Pétillant Naturel was riddled and disgorged without any dosage. Bottle unfined and unfiltered.
(due to the lack of chemical manipulations our wines may appear cloudy or contain sediments, this is not a fault. Please store in a cool place)
