How we made it - Sustainably farmed hand harvested Pinot Blanc on October 1st . Whole cluster pressed into our tulip shaped concrete vessels where it underwent spontaneous alcoholic fermentation for 14 days prior to being bottled. Aged on its lees for 6-8 months this Pétillant Naturel was riddled and disgorged without any dosage. Bottle unfined and unfiltered. This is a natural sparkling wine
