How we made it - Limited production of Pinot Gris that was hand harvest on October 3rd. Whole Berry fermentation during a 12 day native alcoholic fermentation in concrete tanks. The wine was then basket pressed, underwent 100% native malolactic fermentation and aged on gross lees for 6 months. Bottled unfined and unfiltered.
