How we made this stuff - Hand harvested organically farmed Pinot Noir was picked on Sept 11th 2018 from the Buchler vineyard in Oliver BC. It under went spontaneous wild ferment in concrete tanks then was aged a further 6 months in my concrete tanks til we bottled and left it to rest for a further 18 months. Bottled unfined and unfiltered it then was riddled and disgorged June 2020 - Zero Dosage - champagne method
