Tastes like - Peach Crystals and Black Tea on a Very sunny day not in August
How we made it - Hand harvested on October 10th from the Upper Bench Road Vineyard our Sauvignon Blanc was destemmed into our Tulip shaped concrete vessels where it underwent natural alcoholic and malolactic fermentation. The wine was aged on its skins for 6 months prior to being basket pressed further aged in concrete. Bottled unfined and unfiltered.
(due to the lack of chemical manipulations our wines may appear cloudy or contain sediments, this is not a fault. Please store in a cool place)
