Winemaking: Limited production of sustainably farmed and hand harvest Pinot Gris. Whole Berry fermentation was amplified with 20% Whole Clusters during native alcoholic fermentation. The wine was kept on skins for 14 days until it was basket pressed into stainless steel vessel where it aged for 5 months on gross lees. Bottled unfined and unfiltered.

Tasting Notes: Dispersing into the green mountains, brooks playing music lightly describe the sceneries like an angel. You taste a pot of cool teaI, I pour you a full cup of savoury and mellow beverage.
