Winemaking: Organically and sustainably farmed hand harvested blend of Pinot Blanc(72%) and Pinot Noir(28%). Whole cluster pressed into a mix of concrete and stainless steel vessels where it underwent spontaneous alcoholic fermentation. The wine was aged on gross lees for 4 month prior to secondary fermentation taking place in our state-of-the-art Charmat tanks; designed to lie on their sides, replicating a bottle en tirage.
