How it tastes - Lucy in the Sky with Diamonds.
How we made it - Organically grown our 2019 Very Troubled Child was hand harvested on September 5th from the Brazen Bear Farm. The grapes (100% Pinot Noir) were foot treaded, macerated for 6 hours and whole cluster basket pressed into concrete vessel. The wine experienced spontaneous fermented prior to being bottled on October 13th where it finished alcoholic fermentation. Aged on its lees for 6 months this Pétillant Naturel was riddled and disgorged without any dosage. Bottle unfined and unfiltered.
